Biscuits

3          cup                  all purpose flour

1          tsp                   salt

1          tbl                    baking powder

1-4      tbl                    sugar

4-6      tbl                    butter or shortening

1          cup                  milk or buttermilk

 

Use greater quantities for richer biscuits.

 

In a medium size bowl mix together flour, salt baking powder and sugar with a wire whisk.

 

Cut in shortening/butter with a pastry blender until thoroughly blended.  Two table knives may be used as a substitute blender.

 

Add milk to mixture.  Using a fork, stir until mixture is barely moistened, then press together into dough ball using hands.

 

Place dough onto floured surface.  Roll out to about 3/4 inch thickness using a rolling pin.  Cut into biscuits using 2 inch round biscuit cutter dipped in flour.

 

Place biscuits close together on baking sheet.  Bake in hot oven (425 degrees) for 10 to 12 minutes until golden brown.
