Berry Cobbler

CRUST

 

1        cup               flour

1        Tbl                sugar

1 1/2   tsp                baking powder

1/4     tsp                kosher salt

1/2     stick             butter

1/4     cup               milk

1        large             egg, slightly beaten

 

Using a medium size bowl, mix together flour, sugar, baking powder and salt.  Cut in butter with pastry blender until mixture is like coarse crumbs.  Add milk and egg, and stir with a fork until just moistened.  Divide dough in half and place one half in bottom of ungreased bread loaf pan.  Spread flat with a spatula.

 

 

BERRY FILLING

 

3/4     cup               sugar

3        Tbl                corn starch

1 1/2   cups             water

3        cups             berries

1/2     tsp                vanilla extract

 

Using a large saucepan, mix together sugar, corn starch and water.  Stir over medium heat until thickened.  Add vanilla and stir in berries carefully so that they are not crushed.

 

Pour berry filling into bread loaf pan and spoon on remaining dough.  Bake at 400 degrees for 20 minutes.  Reduce heat to 350 degrees and bake 10 more minutes.
